K.I.S.S Recipe: Fried Rice

Love take out fried rice? This is the recipe for you! This is very easy to make even for someone who doesn’t cook often. Keep in mind you can add or omit whatever you want to fit your taste profile. Okay so let’s skip the drawn out stories that most blogs share before they get to the recipe. *Note: My pics are of shrimp and chicken fried rice. My daughter is allergic to fish and seafood so the chicken fried rice was made for the kids and the shrimp fried rice was made the next day for me and my beau*

  • 4 cups of cooked rice (Leftover rice works great too)
  • 1/2 pound of cooked boneless chicken breast diced up, shrimp or whatever protein you like
  • 1 cup of frozen peas and carrots
  • 1 white onion diced or you can use onion powder for flavor
  • 1 to 1 1/2 teaspoon of minced garlic
  • 2 eggs
  • 3 tablespoons of sesame oil
  • 1/4 cup of soy sauce
  • 2 tablespoons of butter
  • Salt and pepper (your preference) 20181113_120117

  1. Heat sesame oil in a large skillet or wok

  2. Add onion, garlic, peas and carrots. stir fry until they are tender20181113_120249

  3. Add slightly beaten egg 20181113_120329

  4. Scramble eggs throughout veggies

  5. Add rice, chicken (or other meat), and soy sauce20181113_120603

  6. Add butter 20181113_120650

  7. Add salt and pepper. Stir fry ingredients until rice is no longer white. You can add more soy sauce if neededIMG_20181112_184257_233

Serve immediately. This should yield 5 or more servings. I did not use all 4 cups of the rice for the first batch. I saved what was leftover (see first pic) and made fried rice the next day. Leftover rice works great if you ever make too much rice for dinner.  It also tastes even better the next day. So there you have it! Easy peasy homemade fried rice! Enjoy!
